Cinnamon Apple Muffins
Our MOMS club group is having a potluck snack as part of our monthly meeting, and since the temperature has been dropping like a rock I thought I’d bake something and warm our house up. One of my favorite quick and easy treats are muffins. The freeze and thaw well, and perfect bites when mini-size. Muffins are like a cupcake but require far less decorating! I always wanted to try my Apple Coffee Cake recipe in muffin form, so check out these delicious muffins the girls and I made!
Apple Coffee Cake
Yield: ~30 mini-muffins
- 1 – 24 count mini muffin pan (after you make the first 24, there’s enough batter to make 6-8 more)
- 1 1/2 cups All purpose flour
- 1/4c Unsweetened applesauce
- 3/4 c Sugar
- 3/4 c Milk
- 2 1/2 tsp. Baking powder
- 1 Egg
- 3/4 tsp. Salt
- 1/2 Apple, diced (no peel)
- Pinch of cinnamon
- Pinch of nutmeg
- Topping:
- 1/3 c Brown sugar
- 1/4 c Quick oats or nuts
- 2 tsp. Cinnamon
- 2 tbs. Butter
- Pinch of nutmeg
Directions:
- Pre-heat oven to 375 degrees, and lightly spray the pan with non-stick cooking spray.
- Batter: Combine all ingredients together, except the topping in a bowl.
- Topping: Combine ingredients together. (I use my mini-food processor.)
- Use a medium size cookie scoop portion muffin batter (fill almost to top).
- Sprinkle 1/2 tsp of topping evenly over the surface of the coffee cake batter
- Bake for 10 minutes or until the top/edges becomes a light golden brown and a toothpick comes out clean when placed in the center.
