It’s that time of year – first days back to school! Our youngest started pre-K this week, and then our other daughter starts next week. We’re back with the Sistema Lunch Cubes again and a great lunch using ingredients from one of our favorite places to shop – Aldi’s!

We Heart Aldi’s

We are always amazed how much fresh produce and other items we can get at Aldi’s. Aldi’s makes it easy to eat with the seasons too, therefore saving even more money. They have apples, but you might pay more if it’s not ‘apple season.’ Blueberries were silly cheap in July, we were in hog heaven! Seriously, go check out Aldi’s if you have one in your area, and bring a quarter!

Everything in this lunch came from Aldi’s, except the Oreo, but you never know – what you’ll find there as a special sale. Our youngest specifically asked for an Oreo for her first day of school, which we rarely have so it’s a first week treat. Usually it’d be something like Animal Crackers or a Vanilla Wafer, but try to keep the sweets on the occasional side. It’s a nice surprise for the girls.

Sometimes it’s tough getting the kids to want to eat bread, but this sandwich sushi or pinwheels as the girls call it makes it more fun!

How I Did It

I used the Sandwich Sushi Tutorial over at Another Lunch.

My only modification to the technique is after I trim the bread, I overlap slightly and roll together – skip the pre-squishing of the bread. The tool I found easiest to squish it all together was my Wilton fondant roller*. It has graduated past being a unitasker, and perfect size for the kids to do themselves. More of my cake supplies are coming out for school lunches, ah how times change!
