Cake in the Morning, Cookies at Night
I’ve known for almost a month the school was having a potluck for Teachers and Staff, no problem – I picked my Last Minute Sugar Cookies to make (secret weapon this time was vanilla sugar – YUM!). No problem…NO PROBLEM right? I put it on my calendar too. Well, just as I was finishing the last sip of margarita at quarter to 6 when I realize….COOKIES! I forgot to make the cookies! (I had intended to make them sometime after my morning car appointment or when our youngest was down for her afternoon nap. I was wondering why I felt extra accomplished today with enough time to organize my row at the library – Oops…..) No problem really, the cookies took about a half hour, but still…so tired because….
I made Chocolate Mug Cake for one of the kids to take to school in the morning because – Surprise! – I find out yesterday today was going to be pizza and cake day for the kiddies graduating. I was cool with the pizza, but not knowing a list of ingredients for the cake I decided to send in a food-safe dessert for my daughter to have.
I love Chocolate Mug Cakes (five minute recipe here), and especially the Molten Chocolate Mug Cake from Cook’s Country even though it takes a bit longer. I keep a copy of this recipe on Google Drive so I can pull it up while in the kitchen, but The Bitten Word has a nice write-up on the recipe! (I substituted chocolate chips for the kids this time around.)
So while I love the Cook’s Country recipe, I seriously underestimated trying to make it with two kids running around worrying about all the thunder and lightning outside that randomly appeared just after breakfast. I had them help me, but all the while I was worrying would the power go out (Murphy’s Law). The power stayed on but the kids kept asking questions about thunder, lightning, rain and how would they eat the cake at school???
So there you go, cake in the morning, cookies in the evening! Everyone’s happy, or exhausted!
