Prepare three dishes with the following:
Dish 1: Season flour with salt and pepper
Dish 2: Whisk egg
Dish 3: Panko seasoned with Paprika
Pound each chicken breast between two pieces of wax or parchment paper.
Place chicken breast in flour and coat both sides. Then dip chicken in egg and coat both sides. Allow egg to drip off a bit, then coat all sides with Panko breadcrumbs. Set aside.
Remove Castello Burger Blue Cheese from refrigerator, and allow to warm to room temperature.
Heat oil in a large skillet, and cook chicken breasts approximately 7 minutes a side. If the chicken is not cooked all the way through, put in oven at 350 degrees for a few minutes, or until chicken reaches an internal temperature of 165 degrees.
Remove chicken from skillet (or oven) and let rest for a few minutes. Cut breasts in half.
Mix together Frank's RedHot and butter and gently coat chicken breasts in sauce. Tap gently to remove excess sauce, place on bun and top with 1/2 to whole slice of Castello Burger Blue Cheese. (Pictured with whole slice.)
